Catching herring in northeastern North Carolina can be a rewarding experience for both novice and expert anglers. The region is blessed with rich water bodies, home to an abundant herring population. A medium-light rod paired with a spinning reel is ideal. When using nets, a cast net with a 4-6-foot radius should suffice. Make sure to have a fishing bucket or cooler to store your catch.

Once you have your catch, it’s time to process the herring. Here’s a step-by-step guide:

  1. Scaling with a fish scaler or the back of a knife to remove the scales, working from the tail towards the head.
  2. Gutting: Make an incision from the anus to the head and remove the entrails.
  3. Filleting: Lay the fish on its side and cut along the backbone to remove fillets.
  4. Rinsing: Rinse the fillets under cold water to remove any remaining guts and scales.

After processing, you’re ready to cook. Here are some recommendations:

If you happen to catch female herring laden with roe, consider pan-frying the roe with some butter, garlic, and parsley for a delicacy rich in Omega-3 fatty acids.
